Good thing I had some curry last night, else this thread would make me crave it again!

I go with S&B Golden Packs as well. Tried and true! It's a tradition in our household. And I am with Kage, mixing med hot and hot together.

As for green curry, I made it once and it was a pain! I prefer to make Japanese curry over green curry, and just order the latter from my local Thai place.

What I had trouble finding the most is Thai basil to make it from fresh.

You should be able to find Thai Basil at asian grocers like 99 Ranch market.
If not, you could actually grow it by using left over basil from Pho places! I don't remember how exactly, but I remember my mom snipping off some of the leaves but using the stems to start growing it herself!

In terms of some other curries, I don't typically make my own thai curries, not being too much into coconut milk, but I swear I've seen this brand with my Thai neighbors.

That's part of the fun! I enjoy spicy foods. I once ate a a Japanese steakhouse and I asked the chef how hot he could make curry? He told me that he once had to call an ambulance to get someone's stomach pumped. Whether he was serious or not, I told him to 'bring it on'. That was without a doubt the hottest curry I ever had. My face went red and I had trouble eating and thinking straight for about 10 minutes. I still ate despite that and when the numbing feeling went away, I finished my whole meal off.


He called me 'Red Dragon' from that day forth.

Half my family is from Trinidad and Tobago, so I grew up on curry.

It is the One True Food.

Unfortunately, there are no restaurants with curry dishes in my area and nobody I know makes curry dishes.  And since I'm not allowed to cook (long story), I'm left without any options for the time being. The closest I can find is this awful prepackaged stuff that tastes like processed sludge, and that is not a suitable substitute even if it wasn't too spicy.  I wouldn't feed that stuff to my worst enemy.
Hey. Those instant curry packets aren't that bad...

Oh, don't get me wrong, some instant curry packets ARE good.  But they only sell this one kind in my town and that specific kind is just terrible.  Sorry for not clarifying that!
