It is quite a shame that I wont even be able to create a character until around 3-5am est...

Most ERP linkshells I know of have closed recruitment policies, meaning an officer or group of members will have to vouch for you as a drama-free recruit. DN is more open in recruiting as far as I know, but I've never joined one of their groups so I can't say more about them.

On the topic of getting onto Balmung in the first place, I don't think waiting for early morning really works anymore, and people have reported the window immediately after maint has been 30 seconds or less. If it's worth it to you, your best bet may be to make a paid transfer over. Keep in mind that paying lets you transfer up to 8 characters from one server to another for a flat $18, so if you're interested in having any alts at all, now's the time to make them.

Like others have said, I think 'mature' is probably a better catch-all phrase, and while it doesn't specify 'ERP' explicitly, it does indicate, 'Hey, if this happens, I'm cool with it.', since mature tends to be inclusive of more adult-focused RP (like sexuality, violence, etc). 

That aside, welcome to the RPC!  As you can see, there's all sorts of people here, some with shared interests, others without shared interests.  I do hope you find whatever it is you're looking for in terms of RP.

Jana's got sound advice on character creation, though.  My husband tried once and barely managed to get into the server to make an alt, and another friend who was making a toon at the same time was locked out when making his literally not five seconds after, and that was months ago.  We haven't tried making a new toon since, and the window is incredibly small and very difficult to catch. 

Making all of your toons on another server and then moving them over onto Balmung is definitely the way to go if you're going to be hopping in any time soon, otherwise I don't hold out a lot of hope on the idea of getting into the server in the early morning, or even after maintenance anymore.

As far as their word choice goes? Why care? I'd be just as content if it read "Au Ra looking to breed!" Exotic/Mature/Erotic, it's all based on the same thing, and it's all a type of RP. Word choice should not matter.

As others have said, make 8 characters.

It's the same cost to transfer 1 or 8, and you'll thank yourself later when you want alts.

Also if you're making alts, one tip i can give is that since you get a free Fantasia vial for each after subbing a month, you only really need to finalize names for them. You can play them long enough to get out of the Lv1 instance to see how you might want to tweak appearances too.

Once you do make it over to Balmung, drop me a line. Nymeia's Web is a new FC with a dark/evil/crime RP focus, and a desire to get a lot of cross-FC RP going - meaning we want to RP with people who aren't in our FC. We have an arc in the works that you'd be welcome to join, as well.

Also, please don't feel like you have to cap your level before you start RPing. While there are those who feel that you won't be taken seriously if you aren't capped, there are plenty of people who welcome low level RPers. Like us.
