Dormouse fur can be purchased from an NPC in Gridania, albeit at a somewhat hefty price compared to what others might be letting it go for - I'm honestly not sure what the going rate is.
I realize this is sort of a delayed response now, but if you still need help with it, I have the necessary leatherworking skill to convert the pelts to fur. Sorry for the confusion there.
