We don't. It's more of a precautionary response than anything - if we don't wind up ever being on the same server as they are, we'll never find out one way or the other. Of course, this is presuming that there are a surfeit of things that they could lock us out of in the first place, something that may very well have already gone the way of the dodo.
In hindsight, it almost might have been a better idea to have the poll running three days after the open beta started... at which point most other polls would have closed, and we could vote on who if anyone we wanted to avoid. Oh, sure, it kills all of the initial excitement, but it's worth it for the ability to hand-pick our neighbors.
As it stands, though, we ultimately will end up where we end up. It's still miles better than hoping and praying you wound up where you wanted in FFXI. And it's also miles better than when we were a year and a half late to the party - I'm sure some of the apprehension over server choice is from bitter memories about Japanese players not too keen on the new batch of American newbs.
