If we are informed of a sudden leap ahead in game time, I will adhere to that, but until then I'm going by real-world time.  Fortunately for me, Ishgard begins training priests and knights at around 11-13 years old, so Ryoko's age doesn't really limit her service to the church.  (I have no confirmation for the apprentice info, but my personal policy on Ishgard is to assume it's identical to the Holy Roman Empire unless stated otherwise.)
