If I remember correctly, some friends of the family used some mix of stock and vermouth when they made it for their hotel/inn. If it's just a case where you don't typically have beer hanging around, I know some stores sell single cans/bottles.

The idea is that you don't want to use plain water for the steaming broth. I'd guess that maybe a white wine of some sort would work too.
