The rule of thumb is :
Gathering Materia is pretty much low return. There are some that will actually have good return (Guerdon 1/2s - Guerdon 1s are around 25k/30k a pop and they can come from entry level gear), Grasp IVs (necessary for right-hand melds but don't sell more than one at a time), but overall crafting materia tends to yield better results for your time. Although if you're SBing to avoid the market like I often did, it's not a waste of time to do these.
Crafting Materia is a much safer, less lucrative alternative to battlecraft materia. While you won't get the returns you'll see on Savage Might IVs or Savage Aim IVs, you'll see much more steady returns by virtue of this category being unable to yield any elemental or primary stat materia. All the materia obtained from crafting (and gathering) materia can be sold at a profit most likely.
Battlecraft Materia is for gamblers. The returns can be massive (upwards of 500k-600k for an in-demand level IV materia) but the RNG can screw you over in all sorts of ways. Giving you a bad (elemental or primary stat, but if you got a Vitality you might be lucky - they sometimes sell quite well) materia, giving you a level III (still good, just not the mad amounts of cash you want), etc.
Most of this is info you'd get on your own so that's not much of a problem sharing it.
