I'll try to answer as pointedly and brief as possible since I'm on my way out the door in moment for work.
Besaid is the unofficial RP server.
It's possible to create your own custom emotes by simply typing in /em whatever. For instance, typing in: /em makes a silly face
Would come out with:
Castiel Mavanix makes a silly face.
You can also use the preexisting emotes and even just the motion such as: /laugh motion. This gives the animation of laughing without the text if that's what you want. Interacting with others isn't too bad. You'll see RP around you often most likely, though it's mostly concentrated within individual linkshells and events. Being a freelance Rper really won't get you too far as a result.
The RPC wiki has a lot of the lore documented (as well as character profiles and player-made literature). It's under the Lore tab at the top of this site. Pretty much everyone acknowledges that Besaid is the RP server. I've seen very few trolls myself, though I'm sure they still pop up from time to time. It's not bad at all though. The non-RPers are mostly used to us now and don't do anything to interfere for the most part. Sometimes the non-RPers will even jump into the RP if they see an opening and try their hand at it. The RP community itself is pretty solid. It's a primary reason Besaid is so populated and it's also a reason so many RPers haven't quit the game yet.
Please keep in mind that this game had a very premature launch and didn't get initial good reviews as a result. It's still free to play as a result and Square Enix is doing their best to fix it up before the PS3 launch, their second chance at getting it right. They've made great progress so far, but there's still a lot of work to go. The battle system is supposed to get a huge overhaul before Spring ends (this is the big update everyone is waiting for, though nobody knows for sure -when- exactly it's coming...just "in the Spring"). They're supposedly also going to fix some other key issues, such as the copy/pasted maps. Just keep all this in mind while playing ^^.
