The crux becomes "when is power actually transitioned?" Because declaring independence doesn't actually grant you independence. The colonies signing a paper didn't suddenly remove England's grasp on the territories, and the war wasn't unrelated. Similarly, declaring secession from the country doesn't actually secede you from a country, hence the attached war.
