RE:Ul'dah Plumming
Let's not forget that the Ul'dah we have "today" is technically built on the remains of Sil'dih, after their war. Sil'dih was known for its plumbing and aqueducts, some of which we see in 2.55. There's a large amount of underground tunnels beneath the city, all of Sil'dihn design.
