Tough question as it's yes and no. You can eat them, and people have done so. It's frowned upon though in certain regions such as around Tailfeather where nature is to be respected. You'd also be eating into your profits. Pun intended Though I imagine they taste like chicken.
Actually, that is the only place so far where chocobo cuisine is confirmed, as I mentioned in my first post. Tailfeather lives of hunting, and not all chocobos captured turn up to be fitting for the Ishgardian market. Most of hunters live of what they capture and cannot sell.
To be an interesting, intriguing, well-written character, there needs to be something to allow the audience to relate to them. That is what the problem is with who wants their character to be "perfect". Perfect characters will never be strong, and strong characters will never be perfect, because WE (those who read, who watch, who RP) are not perfect.
