The multi-installment thing makes me a little upset only because it looks like a blatant cash grab.
There has been no mention of why they're doing it, other than:
"If we dedicated our time to a single release, parts of it would become summarized. We’d have to cut some parts, and additional parts would come in few, so rather than remake the game as a full volume, we decided to do multiple parts."
I would love it if this means they're going to flesh out certain things, making them more interesting and lore-tastic. I still hope it does mean that. Unfortunately it likely means we're going to get a very pretty game that drops the slower story elements to get to action segments, likely skips things like Fort Condor's minigame, and a whole slew of $40+ FF7s to buy. The original game came as a complete package, and HD graphics are no excuse for not doing the same with the remake. What's wrong with a multi blu-ray game? Not much, unless you're trying to milk the hell out of it.
When you give zero details about what it means, other than people are going to be paying for an incomplete game, then you're bound to anger your fans. If this was the Square of FF7's original release... well I might believe them. Their recent missteps with FF13, FF15 taking forever, All the Bravest being a cash grab, and more make it hard to trust them. On top of this, they're doing the exact same thing with the new Hitman game. Granted, with Hitman, the subsequent releases are going to be free... but it's still worrying.
I'm going to withhold being angry or judgement on whether I'll buy the game or not until we get more details... but it is disheartening for a fan.

My life is a chip in your pile. Ante up!
