Just a couple of things..
1. Summoning Mounts - Go with your imagination and bend the rules to suit, summoning your elemental horse sounds great. You are taking the mounts that exist in the system and wrapping it into your RP. Remember it is your RP people are interested in not what head cannon is going on that they never see.
2. Which path - Go with your imagination. If you are stuck for ideas I'd consider why you are even thinking of this route. Playing other people's ideas never really works in my view. So use some of the many "fleshing out" aids on the web to work out what you like and what you want to RP.
