As far as I'm concerned, the Orchestrions are canon, but then, I'm the (likely only) proponent of Game Mechanics Are Lore, Too. We've actually had some RP about the Orchestrion, such as musing about how they work, changing the roll to fit your mood, wondering why someone left it on, and so on. In the Tower house, any FC member can change the music.
In terms of where the music came from, music is a fundamental part of expression. I've gone with some of the rolls being modern compositions, but others being historical or beast tribe music that's recovered and restored or pieced together from historical artifacts -- basically, what the game tells us. I realize that latter concept works better for professional adventurer characters, but there's nothing stopping less adventurous sorts from picking up said artifacts at auctions, from private collectors, etc.
