I mean, they cook with crystals! Think about that for a moment. See that sandwich? I took raw ingredients and shoved a bunch of crystals and aether at it and then -poof-. It was done.
It's possible Lucia could secretely be loading up with Garlean tech hidden underneath her armor. It's also possible that the Ishgardians figured out how to make weaponry and shields that are optimized for fighting dragons. Or maybe magical aetherial dragon fire isn't quite the same as using matches?
