To be honest, most people just start by jumping in. It sounds like you are really eager to do things right on the first step and that's great! Just don't worry too much about making a mistake, you'll be fine.
Strictly speaking I don't think it matters what server you decide on, I've heard Balmung is easier to find more random RP but no way of comparing it personally to Mateus. If you don't mind a text wall I would suggest popping in to some of the events here or the main city inns to get a feel for how everyone role plays. Barring that just ask for RP here and everyone should accommodate.
 There's not really a right or wrong way to RP. I personally never try to effect an accent in text because I just can't do it and it's never been a big deal. Several people do not do much with the race lore and that's fine too.Â
I think the only thing people are really particular about is when the focus is all steered to one character or if the characters personal lore is so out there it becomes a disruption for other characters to acknowledge. Other than that most people are pretty flexible.
