It sounds like you got a not-so-good group. In that fight, you actually do want to unleash AoEs to burn the mobs down fast, so Overpower's a good choice (Blizzard II is also great, if you've got a THM). The healer, whether ACN or CNJ, should be able to keep up with the damage, since the mobs actually don't hit that hard.
In general, as the tank, you want everything on you unless doing so would risk threat on the boss or expose other players to AoEs (or is infeasible or impossible due to the fight mechanics -- say, with the fire mote bosses in Halatali). Have you played the guildhest with Bockman yet? That's good training on when to pick up adds versus let the DPS deal with them.
