I think a C-cup chest would be just fine with binding.  I'm rather larger but a cousin of mine has bound herself before.  She likes to run and is an amateur traceuse (parkour runner) and I believe she's about a C.  The fit of men's dress shirts does make it easier to hide your bust, too, which is nice.
