Eorzean Time is linked to the "disciples of the Land" mechanics since some materials and fishs can only be retriven at a specific Eorzean Hour. So I think the choice they made is more about allowing people to gather material at any hour (imagine if you had to wake up at 3 AM every day to get your 6 crawler cocoon ?) and so being able to craft the ★ and ★★ stuff without needing to wait a week for each piece than any RP linked reason.
