 It might have to be toned down slightly, purely because I could see it being a case of "THE LEAGUE OF EXTRAORDINARY BARDS ARE HAVING A MEETING IN MOR DHONA!", they all mount up, everybody's PC blows up from the lag. (I mean, Mor Dhona is arguably the highest populated zone at peak time, plus the countless effects that said mount would require.) But still, I like it a lot. 
I suppose for other class mounts, they might be:
Paladin - A white chocobo in "valiant steed"-like barding. Like the white steeds of old, but in bird form.
Black Mage - Bomb. Already said this. GIEF BOMB!
Monk - Some form of coeurl in barding (unlike the current "nude coeurl" as I like to call it). I cannot think of much else for a Monk.
Warrior - A darker version of the Paladin mount, maybe more spikes. Because spikes are cool.
Summoner - Your choice of Primal to ride and CRUSH YOUR FOES. Ha, I kid. I was thinking perhaps Fenrir, the moon avatar. I mean, he's a cool looking wolf, about mount size. Could work!
The rest, I'm not so sure what they would have.Â
