Previously, Balmung had been chosen as the unofficial server, but it's full to the point of being unstable when expansions and patches come out. Mateus has been largely agreed upon as another option for roleplay and its population has been growing at a steady rate. If you're looking for a server with more activity in EU hours, then Omega is a good recommendation.
