I've always disliked this part of SAO's premise. There are so many interesting questions to be asked and answered when players are forced to adapt to a completely different body (especially when that body is of the opposite sex).

That being said... I would go on a lifelong quest to find the first Fantasia. And then promptly use it to turn myself into the little girl I've always wanted to be (kekekekeke)!

I mean, I guess I could just go screw around with some NPCs, but I don't see any particular reason why, in this scenario, PvP would be a no-go, especially if it's a world simulation that's supposed to be on par with the Holodeck from Star Trek. Anything that you can do to an NPC, you should be able to do to a player, IMO.

I'd probably do what I could to follow the directives and 'beat' the game. Probably as a crafter to supply the fighty types. I wouldn't want to be stuck on Eorzea as a game. Too many restrictions. Stuck in Eorzea as a world however... then I might not want to find a way back. >.>;

Also, I'd do what Mcbeef said along the way... for science.

Probably die of some horrible bacterial infection or radiation poisoning. I think each planet in the FF universe gets meteor-ed about twice a month, so that would pretty much sum up my existence in the Final Fantasy world. However if I became adaptable to the environment and someone's mom hugged their villain son now and then I'd probably get robot legs that shoot homing missiles like Holly Summers from No More Heros. Just because.
