Aren't there non snowy regions of Coerthas as of Heavens ward? Perhaps they get their food from there or perhaps they depend on dravanian territories won in the war? They were already a mountainous region to begin with and probably know how to survive in cold winters. However, with permanent winter, I imagine their population must be hurting but they are too proud to admit it.
