In my experience most companies will let you try it before you buy it, so to speak. Hit them up, ask if you can stop by wherever their group hangs and see if you mesh. You may also look into an OOC LS that caters to connecting RPers, a few of which you'll find in Virella's first link. Many of them are also willing to field questions outside the game, so you can make some inquiries while you're waiting your 72 hours if you're chomping at the bit.
Events are a good place to meet and interact with players, so check out Roleplay Events. It requires you to be somewhat outgoing though, so this method doesn't work for everyone. If nothing else, it's a good survey of what kinds of RP are readily available before you hit the server.
