Because of Shallot's interest in his Great Grandfather being an apparent Onion Knight, he wants to know more about the Allagan Empire's Onion Knights and the relics/ruins they left behind.
Shallot's great grandfather is actually from another world i/e the world of Final Fantasy Crystal Chronicles and isn't actually a Lalafell but a Lilty, one of the races in that game who are also short like the Lalafell. Upon reaching Eorzea he is confused for an Onion Knight due to the onion-like appearance of the Lilty race.

Shallot's Great Grandfather marries a Lalafell and has children. So Shallot is a Lalafell who simply has a Lilty ancestor/Lilty blood which explains his reddish hair in addition to his proficiency with a Lance/Spear (Shallot is exclusively a Lancer/Dragoon), the main weapon of the Lilty race. How his Great Grandfather found his way to Eorzea/crossed over between worlds is purposely obscure as are other details which have simply been muddled by the passage of time.
Shallot's chocobo is named Veo Lu after the north-west region in Crystal Chronicles.

I just thought it was a neat idea.
I got myself a code for the Onion Helm (only available from a 1.0 preorder) which is his signature piece of gear and my goal is to acquire all of the Onion Armor set from the Crystal Tower much later on, which works our well because the Onion Armor set is exclusive to Lancers and Dragoons.
That photograph of Shallot's Great Grandfather was the finishing touch to the lore. Took me awhile in photoshop to get it looking just right. =)
I also purchased an Emerald Carbuncle minion to follow him around to link him to the Carbuncles of Mag Mell, another location at the end of Crystal Chronicles.
