Chocobo, cattle, and a Roe

Some of you guys know that Fearless was born and raised on a ranch and is currently working at one.  In the future, I would like to have him start up his own place.  The thing is I never really did serious research into what a ranch may be like in the 14 world.  So my questions for you all is.  What would a ranch be like in Eorzea?  Do they have cattle?  If not, what would be a good replacement?  I don't know but are there different breeds of chocobos?  Thank you for your help and any other info would be great.
