I've seen characters sitting with their arms crossed or sitting with their hands behind them, supporting them on the chair. Is this some kind of special emote when they sit cause when I sit down, my character sits upright with her hands on her lap.

Depends on character race too. If they're all the same race as yours then they've done /cpose after /sit which is the change post emote
