
I actually was inspired to make a Doman alt, myself. I'm not terribly worried about the lack of "Eastern" clothing, because the Domans themselves in the quest line (aside from Yugiri) are seen wearing robes and tunics not unlike the models we have in the game. (Example here.)
At any rate, I think it's likely that some of the refugees would be ill content to remain in Revenant's Toll. There's a lot of adventurer traffic there, so perhaps meeting one of these heroic individuals inspired some of them to travel to Gridania, or Limsa Lominsa, or even back to Ul'dah to prove themselves.
As for classes, I don't think it's far-fetched to think a newly arrived Doman (who may or may not have had previous martial training) might also train in one of the Disciplines of War native to his new home. But there are plenty of classes that can have a more Eastern feel with the right equipment:
Lancer: There are polearm models in the game that could pass for yari or naginata. If you have one of the kabuto from the Heavensturn event, some of them look great with some of the scale or leather armor sets in the game.
Archer: As stated above, archers are pretty universal. I'm not sure if there's a bow model that looks similar to the Japanese yumi, which was very tall and asymmetrical in shape, but overall I think any longbow model would work fine for RP.
Pugilist: These are already very heavily "Eastern" in their character animations and the concept of chakra.
Marauder: Just adding to what The Wizard has already said: of note, Kintaro in Japanese folklore wielded an ono or axe. (Quick note here: one reason why such things as axes and polearms are common weapons to so many different cultures is because they're adapted from agricultural tools when needed in times of war.)
Conjurer: We don't know very much about the Doman belief system at this point, but Shinto and the concept of kami is pretty similar (in my mind) to the Gridanians' relationship with the Elementals. Someone with more knowledge of Shinto might correct me on this. But I think it'd be an interesting thing to explore, and if later lore contradicts it, you could always say it's a practice of the "old ways."
Thaumaturges, Gladiators, and Arcanists are hard to fit into a "traditional" Eastern role, but I don't see why a Doman immigrant to Eorzea couldn't begin training in these disciplines.
