I RP my Legacy Chocobo as an IC mount separate from my regular chocobo, he was the one with me from "before Dalamund" though I don't disclose that, I instead explain that he is a loyal steed that I trust only when I feel I need the utmost cunning and guile to see me though a moment. I try to let him rest when I can as hes earned it and instead use my "new" chocobo, who I do care for greatly, for the more "mundane" tasks, and who is more often out afield with me.
I've also seen a few IC Gobbues (though I haven't made that jump myself) which have pretty good explanations as the quest for them was reasonable at the time. Mostly Grindanians, which kind of makes sense...
