If you're looking to dip your toes into RP you may want to take a look at any of the Crystal data center servers. If you're looking for EU based communities, I know they're around even within Crystal, which seems to be where most roleplayers congregate. The Balmung and/or Mateus server Discords are a great place to go hunting for connections as well!
